EUGENE, Ore.—Twenty-two students, staff and community members attended an ice cream basics class at Lane Community College on May 26 with Chef Shane Tracey, executive chef at King Estate Wineries and part-time baking and pastry instructor at Lane.
This free class was sponsored by Lane’s Culinary Arts & Hotel/Restaurant/Tourism Management (CAHRTM) Student Club. The class covered developing recipes and bases, as well as making four products: two ice creams, one sherbet, and one sorbet.
In addition to the hands-on experience making ice cream, sherbets, and sorbets, attendees were treated to a miso soup created by students Linda Hur and Zoe Curtis. A previous free workshop sponsored by the CAHRTM Student Club featured chocolate-making.
